Firm Pears?

I'm trying to use up some ready-to-be eaten pears and stumbled across this tasty sounding recipe:


It calls for firm pears to be used and I'm wondering what will happen with my riper ones. Should I adjust cooking time/temp? Should I refrigerate the pears first? Or do you have a better recipe to use up those darn pears?
