I've been away from Texas for six years and one of the few things I really miss is some damn good queso - takes me right back to Magnolia's in Austin. Back in Texas, I used to make queso at home with some velveeta, rotel, and spices. Now, I know this is Chowhound and velveeta might get some attitude, but if you're a Texan, you know what I mean.
The thing is, I've never found any Rotel (for those of you wondering what it is, it's just tomatoes and green chilis, canned, and it's a TX institution) at grocery stores. Any other Texan transplants around here know what I mean and where to find it?
And yes - I've made queso from scratch before, but there's something missing and I suspect it's Rotel.
