I have read some posts that make mention of pambasos. I did a search (Ctrl F) and nothing came up. I have fond memories of pambasos from my childhood growing up in Mexico. The last time I had one was 8-10 yrs ago. They were served during afternoon parties (Kermeses) and for Posadas during Christmas. I remember them as very small bolillos (you had to special order them from the bakery) that are hollowed out and stuffed with chorizo and potatoes. They were closed together with toothpicks and fried and then dunked for a second in red sauce to make them red on the outside. They were not soaggy. Has anyone had something similar to what I am describing and if so do you mind sharing where you found them.
