I finally broke down and made the vanilla breakfast cake posted by wyf4lyf on March 4. My breakfast baked goods normally consists of Sour Cream Coffee Cake with streusel, Chocolate Buttermilk Cake (my husband loves it with fresh squeezed orange juice) raisin scones, buttermilk waffles, french toast from homemade bread and sometimes Eggs Benedict completely from scratch, even the english muffins. My original post noted my skepticism, due to the lack of spices and or brown sugar.
I let the cake cool for 30 minutes before cutting the first pieces for my anxious husband to try.
His reaction was "eh!". Not so good .. I wouldn't add it to your repertoire. so we covered the cake and refrigerated . I sent him off to work with a piece in his lunch box to see if the cold had done anything to improve his opinion or the flavors - and the answer was still no, he didn't really like it, he liked the coffee cake more and could I make one soon?
My opinion is that the cake is delicious and rich, I like it warm and cold. Its good warm out of the oven, but it might be better with a raspberry coulis. I eat it cold cut into chunks as a snack with coffee in the afternoon (like today). Hope you've tried it - Let me know!
