need final touches to my plan - would you weigh in?

I've researched these posts & additional chowish sites till I am cross-eyed - I need some opinionated final voting! My b.f.'s 30 b-day present is a NY/Paris trip. We'll be in Manhattan for 2 dinners, three lunches over Labor Day. He is willing to experiment foodwise, but is admittedly less adventurous than I am - and he doesn't drink wine. Because we're splurging on the two city visit, we can't blow the entire bank on fab meals. Not too into the idea of 'scene-y' places, either. I want him to have a great NY experience, as this is his first time.

I am thinking of trying the prix fixe lunches at Aquavit (per my family background) and Jean-Georges. One dinner at L'Ecole. A second dinner at either Peter Luger (he LOVES steak) or the less expensive Kitchen 22. I plan to try to squeeze in Katz's and a sweets-stop at Cafe Sabarsky.

While probably a hot-button place, there are two dishes I'd really like to try at Norma's - is that just a total thumbs down? Yes, I saw the prices, BUT.... I'm sorely tempted. I am also still lacking a great (thin crust but not a cracker) pizza destination that's NOT too far out in the boroughs. I'm nervous I'm not throwing in anything more ethnically exotic - say, dim sum. (Shocking admission: even I haven't tried dim sim yet! So I don't know if that's a can't miss or not.)

Any thoughts, suggestions? Gasps of horror, murmurs of agreement?
