I am making a birthday cake for a friend. We're throwing a surprise party and there will be about 15 people present. Yay! I have the cake recipe I want to use (a buttermilk cake with a little orange zest thrown in, which has always come out very well in the past) and I know what frosting I'm planning to make (swiss meringue buttercream with some fresh strawberry puree incorporated).
So here is my question: what do I fill the cake with? I'm debating between making a fresh strawberry curd or another curd (lemon, orange?), or just making more of the swiss meringue buttercream and using that to fill the layers. OR using a differently-flavored buttercream for the filling.
Anyway - I appreciate your suggestions on this. I'm sure you will all have thoughts that I haven't even considered.
