Filet Mignon... lots of it.

So... I'm not usually a filet guy. I prefer the "beefier" new york or ribeye. However, I just visited Nicaragua and bought 15 lbs of filet. I defrosed a whole loin... it's about 5 lbs (HUGE!)...

So what do I do with it. I'm probably not going to cook the whoel thing, I plan to vacuum seal probably half of it and refreeze it... what do I do with the rest? Any ideas are welcome.

I'm thinking of just making filet steaks with a balsamic glaze. Sounds boring, but I'm not the most creative person!
