Fiddleheads - Were they supposed to taste that way?

babyfork | Apr 29, 200204:38 PM     20

I was intrigued by the posts about fiddlehead ferns a few weeks ago. When I saw some at Whole Foods I pounced and bought a small amount. I washed them thoroughly and steamed them gently for 4 minutes. I tasted one. It tasted like, well, it tasted like the forest floor. Like I would imagine earthy forest floor dirt to taste like. I tried another, this time dipped in a sauce I had prepared for the fiddleheads (I got it off of Epicurious and it was supposed to be for them). It tasted like dirt in sauce. Is this the way they are supposed to taste? (By the way, the sauce was really good for artichokes, so it didn't go to waste)
