I have been keeping my eye on Stan DeVoto's stand at the Ferry Market for a few weeks now since it's apple season. Last week was the first of his Gravs and they were tart (I like my gravs a little sweeter). This week he had more Gravs and the dramatic pink pearl apples. Pink pearls have an beige-y skin with light light pink undertones. The flesh however is fuschia to red. They aren't good out of hand IMO but are amazing to cook with.
Because of their color, they are so dramatic in an apple dish because their cooked color is a deep deep red, almost burgundy. I love showcasing them in a fluffy apple pancake or tarte tatin. Pink pearls have a very short season and Stan will only have them again next week. They are $2.50 a pound. The Apple Farm may also have them.
