Fermented black beans

I am in a quixotic quest to cook without food products imported from China. This poses problems, especially when cooking Chinese food!

Does anybody know how to ferment black beans at home? It doesn't seem like it should be that difficult, but I can't find any instructions to do this on the Internet.

Of course, that still will leave no solution for Xiaoshing wine, oyster sauce, etc...
