Recently went out and bought some of this expensive but wonderfully aromatic stuff. It definitely smells of fennel, but also has a stong resinous aroma with hints of cumin and maple syrup. (And boy does it linger. I could still smell it on my fingers the next day, and I'm a hand-washing fiend).
I sprinkled it on sauteed calf's liver and some buttered noodles, and it was excellent. The package recommends putting it on all different kinds of meats and seafoods. Wondering if anyone's come up with some especially good and/or unusual applications. I feel like there's a dessert application out there. Some kind of custard perhaps?
