I'm using my nasty cold as an excuse to stuff myself full of soup. I didn't have much energy today, so I made the simplest soup ever - not only did it taste fabulous, it was a seriously comforting dish.
Here's the (approximate) recipe:
1 medium turnip, diced
3 c. fresh turnip greens, washed, drained and chopped
1/2 onion, sliced
2-3 tbsp. white miso paste
Put the turnip, onion and greens in a pot. Fill with water until it covers the veggies by an inch.
Bring to a boil, then simmer for 15 minutes on medium-low heat.
Put 1 to 1 1/2 tbsp. of miso in each of two soup bowls. Ladle out a cup of the hot water from the pot into each bowl. Stir to dissolve the miso. Split the rest of the soup into the bowls.
