FEEDING 12 NO TIME ON DAY OF PARTY TO PREP MUCH

My husband and I are having a going away party/Scrabble tournament next Saturday and we're providing dinner.

I'll be working on Monday, Wed, and Fri, and so cannot prep any time on Fri. but after work.

The group is coming at 11 a.m. and we're all going to be playing most of the day.

Any suggestions for not-too-much-work-but-fabulously delicious-type main dishes?

I am considering something we named Enchiladas San Fermin for no good reason years ago. It's corn tortillas stuffed with roasted green chiles, cottage cheese, sour cream, lots of chopped green onions and jack cheese. Topped with more of the stuffing and baked. It's pretty easy to make ahead.

Anything that would go along with this? Mexican-influenced salad? Veg?

What about meat? Should I consider putting some chorizo in the enchiladas?

Help greatly appreciated!
