Feedback on itinerary for 2nd trip to Portland!

We went to Portland last year (see thread and trip report which I attached here) and loved it. But since my older daughter broke her ankle 2 days before the trip, we didn't get to do as much as we wanted, so we're headed there again in a few weeks for an extended July 4 weekend.

I'd love feedback on my proposed eating itinerary:

We land Wed. night and plan to go to Ox restaurant for dinner.

The next day is July 4th. For lunch, I figured we'd check out the food carts that we missed on our last trip as I'm assuming they will still be open. I had Nong's delivered (due to the kid's broken ankle) so we never got to peruse the carts on our last trip. I'm hoping they're open on July 4th!

For dinner, I had made a reservation at Jacqueline a while ago, but they called me this week and said the system accidentally let me make it and they're actually closed on July 4th! So I scrambled and the only reservation I could get that looked mildly appealing is PokPok. It wasn't on my list to try, but the other options on Resy didn't spark any interest. I called Afuri Ramen to see if they're open on July 4 but got their voicemail system and no one has called me back yet. I know Afuri doesn't take reservations, but I want to know if they'll be open. I figure a back-up option might be to go to Rose VL, since ethnic restaurants tend to stay open even on holidays.

My husband is taking our younger daughter fly-fishing again on Friday, so I plan to take my older daughter out for her first omakase experience. She loves sushi, but she tends to focus only on hamachi and maguro nigiri. I did a little research on-line (basically reading reviews and Eater guides) and settled on Masu Sushi but I'm not wedded to it at all. I welcome other suggestions on this!

Assuming they get back in time for dinner, I made a reservation for 4 at Quaintrelle. I saw it here mentioned by Melanie Wong and grayelf, plus the menu looks great and I was able to get a reservation. My other options for Friday dinner had been Coquine but only reservations for the 4 course meal is left and we like to have more flexibility since we have tweens/teens with us. Would you favor the 4 course meal at Coquine over Quaintrelle?

The next morning we plan to hit the PSU Farmer's Market, as we had a fantastic experience there last summer. We'll snack some, but I made a lunch reservation at Kachka as we never got to try it last year. I know some said it's not worth going there for a meal and to stick to Happy Hour, but our dinner reservation is set and I don't think we can eat at Kachka's Happy Hour and then have dinner so close together.

Dinner will be at Le Pigeon again, as we loved it last year and hope it lives up to expectations. I find I am sometimes disappointed upon returning to a restaurant where we had a fantastic meal the first time. Our second times at Commis in Oakland and Meadowood in Napa were both disappointing.

Our final meal will be brunch on Sunday. I was considering Tasty N Daughters or Coquine, but neither place has available reservations for brunch. They take walk-ins but we really dislike waiting in line. So I have a 9:30 am reservation at Olympia Provisions as a back-up. We fly out after brunch so we need to be done by 11 am (preferably a little earlier so we can go back to check out and then go to the airport, as opposed to bringing all our luggage with us to the restaurant).
