Help feed a phenylketonuric (sp?)

I have a friend who is phenylketonuric (not sure if I spelled that right), meaning that he can't eat a certain amino acid that is present in most proteins, including meat, eggs and milk (all animal proteins, I think), tofu and beans. I'm trying to come up with recipes for dishes to serve with rice that he will be able to eat.

Right now I'm thinking broccoli sauteed with garlic, but am hoping for something more interesting also.
