Feast of San Gennaro 2016

I was eating delicious pasta with a friend in Little Italy yesterday when she noticed the Sausage and Peppers counter across the street putting out empty cans of (gasp) peppers! They had fresh peppers on display, but stacks and stacks of canned red and green peppers! As we walked back to work, and were now paying attention, we saw that almost all of the S&P stands had the same cans of red and green peppers that they apparently use. But why?
I don't get it. Peppers are cheap, in season, and taste better fresh. Why use canned? Canned foods have their place, but I can't wrap my head around this. Thoughts?
