I wonder what you all have as your favourite do-it-all pan ?
I finally bought into the carbon steel hype adn bought a De Buyer Carbon Steel pan, and have to admit, that once you get the seasoning right, the carbon steel pan truly is one amazing pan for almost everything, except food with too much acids. Still not quite crazy about not being able to clean ti with detergent after I've used it, but hope to be able to learn to live with it.
However I still think my 5-PLY and 7-PLY pans from Mauviel and Demeyere are my current favourites all around pans for everyhting, except for cooking eggs and omelettes.
My Le Creuset 30 cm cast iron ECI pan is quite good too, but it's not my favourite - it's heavy, cumbersone and takes quite long to heat up.
Best value has to be the carbon steel pan - the De Buyer 28 cm only cost me $44.
