I wonder that your favourite knife brands are in your home kitchen collection ?
Do you personally feel you get better knife performance and shaprness from the more expensive brands or do you honestly feel the Victorinox påerforms as well as the more expensive brands ?
I'm starting to look into Miyabi and KAI Shun knifes.
My collection currently consist of main stream brands: Zwilling Twin Cuisine and Global
Looking into going a step up.
My knifes perform great, so I have no need to take the step up, but as a gastro-geek it's a natural step to take, I feel.
Do I need better performance than what I have now ?
Not really, but I expect to be able to feel them cutting better and perform overall better, but I do feel there is a chance I will get disappointed, because they might not perform that much better in reality.
What are your thoughts on your own collection and what are your favourite brands ?
