I'm planning to infuse some vinegar for Christmas, something that will make a lovely salad dressing later. Do you have a favourite infusion aside from the classic tarragon, raspberry etc? (Preferably one that will be ready in three weeks!).
Right now I'm tempted by this star anise and mint one: http://en.julskitchen.com/ricette/vin... but it makes vast quantities, I just want a litre or so.
Would love to hear about your tried and tested infusions.
