Favorite smoked salmon at Russ & Daughters?

Question

Every time I go to Russ & Daughters, I always get the Gaspe Nova smoked salmon because that's the one I'm most familiar with. Are the more expensive ones pp (Scottish and Wild Western) tastier? I have yet to sample them as well as the cheapest one pp, Norwegian. 

Which smoked salmon do you recommend the most based on your experiences there?

i usually rotate btw Gaspe, Irish, Scottish, and Gravlax -- I think it's extremely subjective/personal preference, and also, as said above, can vary batch to batch...

Also agree that the whitefish salad is great -- it's little diff from other versions in town as it's part-whitefish, part-salmon...

I sometimes splurge on the sturgeon (which can be dry at times, so worth tasting first -- and if dry, they have a "Private Stock" batch in the back which is even pricier by a buck or two per 1/4 pound -- though I've found that on good days, the regular sturgeon is just as good)...

There could be a whole separate thread comparing the herring options (I usually get Swedish Matjes)...

My main gripe with the smoked salmon at Russ & Daughters is that they don't trim the salmon's brownish parts (the scraps) which not everyone likes. Fairway's smoked salmon which is also cut to order has those scraps removed and placed in a container to be sold for a cheap price to a future customer. At Russ & Daughter's there's no way to look behind the counter to observe the employee slicing the salmon (the counter blocks your entire view), but at Fairway, you can see them doing all of the work. 

I'll try to ask them to cut off those scraps at Russ & Daughters next time. I think someone told me here on Chowhound once that they DO remove the scraps.

I always go with two varieties. One is always wild western. They are the only local place that sells wild, Fairway did, but not for about a year now. I choose the wild western because of all the reasons many prefer to eat wild over farmed and the fact that it is excellent tasting. It is not to mild (boring) not to strong (over smoked). Try it.

Once in a while they'll have Danish double smoked salmon, and it is just sublime.

I can also recommend the kippered salmon. It is sold in chunks and has a very different texture and taste than the standard smoked salmon. I only recently tried it and it is part of my rotation now.
