What are your favorite recipes for bake sales (making and purchasing?)

I have just been informed I am now in charge of a bake sale for a local Humane Society event that last year had over 10,000 humans and 16,000 dogs attend. I am beyond stressed, it is just a week from Saturday and I've got a handful of people bringing treats to sell (mainly cookies and dog treats so far) & I've procured a professional kitchen this Saturday to cook with some friends but I'm just at a loss of what all to make and how much.
What are your favorite things to make (human &/or dog) and what are your favorite things to buy at a bake sale. Also if anyone else has done anything like this (cause I never have) do you have any idea how many things I should plan to have on hand to sell? Can you tell I'm freaking out a little (OK, a LOT)
