So I have recently found myself the happy owner of 12lbs of loveingly hand carved Pork Butt/Shoulder!
Tonight we are having the Zuni Mock Porchetta (Using about 2lbs of it) and I plan on making Rick Bayless'Chile Verde (with another 2lbs of chopped up pieces...)
I've also been mulling over what other things to make. Perhaps Cochinita Pibil, I mentioned Pulled Pork to my BF but he's resistant to do it because we don't have a smoker... I also LOVE Chili and does pork butt work well ground in sausages? ! :)
So I was wondering, what are you guy's favorite way to prepare the butt! I'm hopinf for further inspiration. :)
