I have been using Joanne Weir's recipe from the book From Tapas to Meze for a few years now. I was recently given a gift of wonderful home grown tomatoes and basil and I had some lovely cukes on hand so the salad came together rather well. The link below has the recipe I use except the book calls for half balsamic vinegar and half red wine vinegar, 2 tbs capers and 2 cloves of garlic. i didn't peel or seed the tomatoes as I was in rush to make the salad. I had it tonight for dinner. It was so fresh and satisfying. Any other good panzanella recipes out there?
