Favorite lengua/other tongue preparations in EB?

Hi all.

I've always loved tongue in all it's myriad forms, but for some reason I seem to have had a run of not-so-great lengua recently (too fatty or too gristly, too bland, etc). So I've kind of been off of it for the last few months. However, I had some excellent lengua tacos at Taqueria Calafia in Alameda last night. Don't know if I would whole-heartedly recommend the restaurant overall, as our other food wasn't great (soggy carnitas and so-so chile verde), but man, that lengua. It was perfectly soft and savory, and managed to reignite my passion for tongue. (On a side note, my 9 month old also loved it. Never thought of it before, but it's the perfect meat for the toothless set).

So, where's your favorite tongue? I love lengua, but also love other beef tongue preparations. I grew up eating my dad's braised tongue and it still might be my favorite meal. Any great tips for beef (or pork, or other) tongue dishes? Please share!
