Chatting with damiano about knives, he suggested we start a favorites thread. My interest is that I have a few Wusthof knives, pictured below, and have been thinking about adding couple new styles to the collection. I’m intrigued by carbon blades and Japanese shapes, and I’ve begun to watch videos on technique with different knives. I find the whole area as fascinating as cookware and cooking. I mean, cutting veggies and most other things with a clever? I’d have never thought of it…
So, I’d love to know what your favorite knives are, and why. I supposed it doesn’t have to be a knife you own… as I sure have some favorite pieces of cookware that I don’t own… but want BADLY.

Oh, and to the extent possible, I’d like to ask if we can incorporate a rule from a woodworker forum I’ve been on. If there isn't a picture, it didn’t happen. Sound like fun?
