What are some of your favorite kitchen tricks that you'd be hesitant to admit to foodies?

For example, though I'm very much anti-processed foods, I always put add Kraft "Parmesan" cheese (yes, the stuff that comes in a jar) to mashed potatoes because it really does up the butter/cream taste substantially.

Another example, when making Shepherd's pie or gnocchi, I use instant mashed potatoes because I like the texture better. (I'd never instant potatoes for a side dish.)

So.... what are some of your kitchen tricks that you wouldn't normally admit in front of foodies?
