What's your favorite kitchen knife--and why? The why is the hard part.
My favorite, the Miyabi 8" birchwood guyoto, is not the most frequently used--nor is it the most versatile--but it's my favorite. Even before I grab it, I enjoy seeing the real birchwood handle, and when I hold it, I can't help but notice the beautiful damascus pattern on the sides. But when I use it --that's when it puts a smile on my face as it brings my prep experiences up a few levels.
