Favorite Frittata for a Group?

Hello,

I'm hosting a brunch/baby shower next month and would love to hear everyone's favorite frittata recipes. I'll likely keep it veggies only and serve bacon on the side. I'm in California, so can get good veggies. Thanks in advance for your ideas!

Whatever veggies you choose, goat cheese will probably work well with. Chives for sure and garnish with chive flowers, maybe.

I made this for a girls' brunch in September, and it was very well received. http://www.foodnetwork.com/recipes/ina-garten/smoked-salmon-frittata-recipe.html I had a vegetarian in the group, so I served the smoked salmon on a platter on the side. 

Might not work for you, since you're already planning on bacon, but it's one suggestion for consideration. I also suppose you could omit the salmon entirely, though it was a nice combination of flavors.

Rainbow chard, leeks, roasted tomatoes, mushrooms, and goat cheese. Asparagus would also be lovely if you can find really nice, fresh ones at the farmers market.

Don't know about veggie add-ins, per se, but I always like to mix in a salted duck egg into the egg mixture and then proceed from there.

Adds a certain je ne sais quoi to the frittata.

Sauteed mushrooms and leeks +\- spinach 

Fresh artichokes are a PITA to prep but defrosted frozen hearts chopped and sauteed with green onion, maybe add a mild fresh feta, would be great. 

For any added veggies be sure to precook them enough to remove excess moisture so you don't get a watery frittata 
Since you're in CA I assume the sliced avocado ontop of the frittata is just too obvious to remind you of.... ;)

I have made this baked one many times subbing seasonal vegetables for the asparagus. It is easy and very good.

I make a frittata at least once a week for dinner. I always start with a base of sauteed thinly slice potatoes and onions. My egg mixture (for a 9" fry pan) is 6 extra large eggs, a handful of grated parmigiano reggiano, a splash of milk and some chopped fresh basil. Before adding the egg mixture to the sauteed potato and onion, I usually add in whatever fresh vegetables I have leftover in the fridge. Last night it was the tougher, outer leaves of a head of escarole I had used for a salad earlier in the weak. I cut the leaves into largish ribbons and quickly sauteed them with the potato and onion before adding the egg mixture and topping it with goat cheese and some more grated parmigiano reggiano, letting it set on a low heat for a minute and then into a 375 degree oven for 18 minutes. It was delicious. I can see doing a larger one for a group. Definitely filling, but not too heavy.

I like a Spanish Tortilla which is similar to a frittata but could stove top and served at room temp.
