Looking for Your Favorite Buttermilk Waffle

I have been pouring through books and online to find a good butermilk waffle that doesn't require seperating eggs or use a TON of butter or oil (i would hope for no more than a few tablespoons). I will be using a belgian waffle maker but do not need a belgian waffle receipe per-se. I have never made a buttermilk version before (have always stuck to standard flour, eggs, milk, etc.) and would really love you thoughts for breakfast tomorrow!
