My mom lent us her ~30 year old Belgian waffle maker (which, while often used, is still in near-mint condition in the box with all its packaging). We'd like to make some awesome waffles for breakfast tomorrow. I can't decide if I want my first attempt to be a yeast recipe or a baking powder recipe. We like crispy (not crunchy), light waffles that hold up fairly well to maple syrup or jam on top. Do you have a most favorite, tried and true recipe for perfect Belgian waffles?
