My absolute favorite aperitivo:
3 parts Fino (Manzanilo is better but who's paying that much attention) I like Barbadillo for PQR
2 parts something bitter: Nonino Amaro, Suze (terrific), Amaro Averna, Cynar. Try amari or aperitifs that suit your taste but stay away from too sweet. My current favorite is Suze.
1 part lemon juice (maybe 3/4 part depending on the lemons)
Stir over ice, lots of ice.
Strain into a flute.
Fill with seltzer.
Crazy good. Really.
And way better than the usual boring chard.
