Fave omelets in LA and why?

Mine are at Joan's on Third (http://www.joansonthird.com/), because they're tender and rich, but never overcooked, and the fillings are simple, elegant and very tasty. Also, according to Alex Guarnaschelli, they add water instead of milk or cream to achieve the delightful fluffy texture (http://www.foodnetwork.com/recipes/al...).
