What can I do with fatty corned beef trim?

I have a lot of tasty but very fatty corned beef trim to use up. Any ideas? Too fatty even for hash. I thought about using it as a basis for beans but worried the flavor would be too weird. A local restaurant makes a good soup but I have no idea what proportions.
