Over a year ago, I was watching a Food Network special on Menudo in Mexico. The menudo they were profiling wasn't your typical tripe/hominy mixture, but had all sorts of other internal organs (lung, liver, heart, etc.) as well as several meat parts (tail, hock).
Does this creation, or something like it, exist anywhere in LA? If not, can you recommend places which are known for menudo, even if they serve only the more pedestrian variety?
