Superb silky texture in the slices of water cooked fish/shui3 zhu3 yu2, perfectly poached. Medium chilli spiciness and minor notes from the sichuan peppercorns. Could have been more numbing, but otherwise good flavour carried by the oily gloss.
Smoky slices of fatty twice cooked pork, with salty umami notes from the dou4 ban4/preserved bean sauce. Fairly deft wok technique.
While not the absolute best of it's kind, certainly qualifies as very good and homey Sichuan cooking.
