Where do you fall on the latke spectrum?

'Tis the season for fried potatoes. Yesterday's Washington Post had a recipe for super-easy latkes using frozen (defrosted) hash browns. I like to think of myself as open minded but....geez....I suddenly felt like a fussy old lady unwilling to accept new ideas. I'm fine with your apple cheddar fritters or using sweet potatoes, zucchini, beets, whatever. However for me a latke is potatoes, onions, and oil. Period. I am on the far end of that latke spectrum.
