that fall-ish craving... for pie...

All my flatmates have expressed a desire for pie -something to do with the change in weather, I think! I'm not American, and pie isn't something I've ever eaten at home, and am only starting to get into here (give me a nice custard fruit tart any day!). Does anyone have any interesting pie recipes? I'm thinking green tomato pie, or some other fruit or veg I can source at my local farmers' markets. Maybe even a savoury vegetable pie?

Oh - and does one bake the bottom crust typically before baking with filling, or do most pie dough recipes just have you bung the filling on top of a raw pie crust and then bake? Or does it really depend on the recipe? I've got two disks of the buttermilk pie dough from EPI sitting in my fridge, and the recipe doesn't say...
