Help - Fajitas!

I am a creature of habit and usually find myself at home on Saturdays having tacos for dinner. I usually make shredded chicken and boil with water and seasoning and then add the shrimp in the last few minutes. I have some defrosted chicken and picked up some shrimp on sale today and thought that I might do fajitas instead. I did a quick google search and it seems that there are two different methods, if you will 1) marinating the meat overnight and then cooking and 2) cooking the meat and simmering in water with seasoning. Does anyone have any preference to these 2 methods? I think I would prefer the latter as I would like to cook up the chicken and shred it first. Any good seasoning mixes or additional tip? Thanks in advance.
