I was in Fairbanks for several days last week, some of my experiences:
Pike's Landing: went here the first night for dinner - disappointed, the salmon and prawn dish overdone - salmon cooked till it was kind of greyish and prawns rubbery. Also the mashed potatoes reminded me of indifferently-prepared instant, very "dry". At least the veggies were not overcooked. It should have and could have been better.
Because I basically had no choice (was stuck waiting for my ride to the airport later that night), I returned on my last night to the "lounge" side of the place and hung out at the bar, the beer was fine and the New York steak was also not bad, so maybe they do meat better than fish.
Thai House Restaurant: In the downtown area (5th just east of Cushman), was fine - clean, good food, polite and gracious service.
Lavelle's Bistro: Very nice, my co-worker had a scallop salad that she really liked, and I had a potato-encrusted salmon filet that was everything the Pike's Landing filet was not - pink and flaky and flavorful, perfect ! Also this place has a nice, interesting and broad selection of wines, reasonably priced. Excellent !
Cafe Alex, downtown near Lavelle's Bistro, is a cool little wine bar and cafe, with interesting photos and art on the walls, a fun space ! Food was good too, had a veggie quesadilla with chips and some good coffee. Would have liked to return to sample some of the wines etc., but was out of time.
