I wanted a quick and easy gluten-free dessert and found Joy of Cooking's Vanilla Pudding. The recipe says to cook until it starts to thicken, but doesn't indicate how long that should take. Apparently, I didn't cook it long enough because it never set - it's just jiggly cream.
If I warm it back up and cook it until it gets thicker, is there any chance it will set?
Or is there anything else I can do with 2 cups of sweet, vanilla-flavored cream?
