... I have everything here for Paul Prudhomme's Cajun Meatloaf (low-carb version).

Darn it! Even worse, I'd been thinking about making a (high-carb) Natchitoches meat pie riff and c'mon, how good does that sound?

Now, how good does chicken and smashed potatoes and maybe salad/maybe collard greens sound? Yeah, not so much.

There's a reason I usually write out my plan for the week.
