Flawless is the only way to describe our first visit to Cortez. The restaurant was able to accomodate our last minute change from four people to five; we were seated immediately upon arrival at a spacious table; our waitress knew in advance (from the Open Table reservation) that there was a vegetarian among us and patiently explained exactly which dishes qualified and which others could be modified to work; this same waitress (as well as the rest of the waitstaff) would prove to be extraordinarily professional; the timing/pacing was great (the dishes came at perfect intervals - we were never hungry nor did we ever feel rushed). The food itself was terrific: corn ravioli, katafi-crusted crab cakes, beet salad, duck, lamb, fries and a chicken-less mushroom dish. A bottle of Spanish Garnacha (a bargain at $39) was delicious. Wow. Very impressive.
