A fabulous Fourth (a bit long, very happy)

I just have to share the wonderful meal my husband and I just prepared, because it was so simple that I hope you'll try this if you haven't already. We grilled two beautiful salmon filets on cedar planks. I soaked untreated cedar planks (I have seen them in packages of two at several supermarkets) in water for four hours. Meanwhile I marinated the salmon in a mixture of olive oil, lemon juice and zest, and fresh basil. I oiled the wet planks and set the fish on them. They were supposed to go over medium-hot coals for 20 minutes, but I think we actually cooked for almost 30 minutes before the fish was done. It was perfectly flaky and moist. I had made a maple syrup/garlic/orange zest/Dijon glaze to brush on one of the filets, and it worked out very well. We had a good spinach salad and buttermilk mashed potatoes, and then the piece de resistance: Philadelphia-style peach ice cream similar to Carb Lover's (no almond extract) with superb peaches from Fairfield, Texas.

Wish y'all all could have been here. We got up from the table two hours ago and we're still glowing. Do try the planked salmon if you never have--it was so easy. I'll give proportions for the glaze and marinade if anyone is interested. Happy Fourth of July!

Now we're going down the street to help my mother-in-law freeze some of these amazing peaches...
