Extra latke batter

Owing to one no-show and the fact that this year's guests (relatives) have smaller appetites than last year's (friends), I'm left with enough batter to make several dozen more latkes. I've never, ever had leftovers, and don't know what to do. Can I freeze it? Or should I invite a bunch of people over tonight for leftovers?
