Please explain and rate the various dry Italian sausages!

As silly as it always sounds, I'm a huge fan of sausages. I love nothing more than thin-sliced Genoa salami in sandwiches, but it seems like there is a whole world of dry Italian sausages to discover beyond that. I see a lot of them at my local Publix, mostly from the high-end Boar's Head brand of deli meats and cheeses. I don't even have names off the top of my head, but some of them look like salamis covered in pepper or herbs, some look spicy, and most of them are relatively expensive, given their size. I'm sure I would love most of them, but what are some of the best?
