Looking to Experiment with New Cuts of Meat

I buy most of my meat at Whole Foods, and generally get the same thing: pork tenderloin (wich I brown and roast), chops, ground lamb (for lamburgers), chicken breasts, and occassionally some filet mignon when it's on sale.

But there are so many other types of beef and pork roasts and sirloin tips, skirt steaks, london broil and eye round, and all that stuff, that I'd be curious to cook, but have no idea what to do with.

Anyone have suggestions for uses for some of these cuts? On the healthy side appreciated, but not necessary.... Also, I live in an apartment and unfortunately do not have acccess to a grill...
