Last week, I was in the Bay Area and had some great meals at Picante Cocina in Berkeley. They have wonderful aguas frescas and bebidas there, and I re-experienced how good real horchata can be. Most places that have it use instant mixes that taste like bubblegum.
When we got home from our trip, I looked at the carton of Rice Dream I'd gotten for making fruit smoothies for my kid and I thought-- hmmm. Into the blender, I poured a quart of plain rice milk, added a half tsp. of vanilla extract, three Tbsp of turbinado sugar and a quarter tsp. of ground canela (Mexican cinnamon). Whirled it up, tasted and then thinned with chilled water, adding slightly under two cups. Perfect! Had to share this, although I'm sure others have been doing it for eons.
