This is his english translation of 1st edition of Le Guide Culinaire (abridged). So when people are throwing his name around, you can search here to see what the man himself had to say at the time. I've gone back and checked on some things, and there's a few occasions where a particular claim is questionable.

Supposedly the full translation of the 4th edition. I would not feel comfortable quoting Escoffier unless I actually owned this book.
