Epoisses--How Long at Room Temperature

If your epoisses is ripe, how far in advance would you take it out of the fridge prior to serving? I want it to be really creamy, but I've always been hesitant to take it out of the fridge more than an hour. (
(Just concerned about bacteria if it is unrefrigerated for too long.) Thank you!
