environmental impact of veal vs. beef; lamb vs. mutton

I would assume that veal is much less environmentally efficient than beef per lb of meat yield; and lamb less so than mutton. Can someone give me some solid evidence to support or refute my assumption? and if I am right, why is it so hard to find mutton?
